We are your guide, the kelp fisherman and fishermen's wives, Japanese traditional food culture Washoku, Dashi, Umami. The Rausu kelp harvest, the summer season from the mid of July to the end of August. We keep and continue the traditional method of sun-drying on the stone beach, even mechanization has progressed. So now, visitors can experience the process of Japanese food culture with us, how it grows in the seabed, how it makes super dashi way, and so on. Here is the place Shiretoko, where was registered as national park 60 years ago, as natural heritage site 20 years ago. And WASHOKU also was done as culture heritage UNESCO.

What's included in Kelp Fisheries Experience, Traditional Japanese Food Culture

Firstly, we guide you how to produce them while looking at actual kelp fishing gear. Secondly, we will prepare Rausu kombu using scissors specially made for craftsmen. Nothing is the same kombu, shape, weight, length, damages as well. You will experience traditional Japanese craftsmanship with us. After we carefully finish shaping kombu, fold and put them in the package for gifts. Finally, put on a “Rausu kelp KANJI sticker” for the souvenir. And you can experience cooking local kombu cuisine, which is the origin of Japan's highly regarded traditional food culture, contains. Let’s interact with the talkative wives, learn how to make the local cuisine, the mackerel fish cake rolled with kombu. Making a fish paste with seasoning, kneading it in a mortar by a wood stick., then wrapping and rolling up them. Then steaming it in the pot.
