Learn how to make it with your own hands, led DA Camilla Pizzorno, Genoese Pesto World Champion at the Mortar, and discover the secrets of a tradition handed down for generations. During this authentic experience, you will learn about carefully selected local ingredients and prepare pesto with your own hands with a marble mortar and wooden pestle, just as tradition dictates.
At the end of the experience you can taste it with typical Genoese focaccia and traditional local pasta such as troffie or pesto gnocchi. We will conclude the tasting with a local dessert, such as Torriglia canestrelli or tiramisu. All accompanied DA a good wine of the Rivera Ligure and typical Italian liqueurs, such as Limoncello, myrtle, amaro camatti.
At the end we will also send you the recipe, all the photos and videos that we will take and DA give you a small gift from us.
1. The authentic ingredients We will start exploring the fundamental ingredients of the tradition: from the scent of basil DOP, garlic from Vessalico, Italian pine nuts, Parmigiano Reggiano, Fiore Sardo pecorino cheese, extra virgin olive oil from the Riviera and coarse salt. You will learn to recognize its quality and role in each step. 2. The mortar technique With the Carrara marble mortar and the olive wood pestle, Camilla will guide you step by step in the preparation of your pesto, following the original technique and gestures handed down DAti for generations. 3. History, memories During the preparation, Camilla will share anecdotes, curiosities and secrets 4. Final tasting We will taste together the freshly prepared pesto, served as an appetizer with Genoese focaccia and paired with a typical Ligurian pasta, such as trofie. The tour will end with a traditional dessert, the canestrelli, accompanied DA Riviera wine and typical liqueurs such as limoncello, myrtle and Camatti. 5. Memory of the experience At the end you will receive the original recipe of the World Champion, along with photos and videos of the experience, as well as a small gift to take a piece of Liguria with you.
At the end of the experience we will taste the freshly prepared pesto with typical Genoese focaccia.
