During this workshop we will come into contact with an Umbrian tradition: butchery. That of the pork butcher is a very ancient profession, and Umbria, in particular, has managed to make it a real culinary art renowned since Roman times. Today our chef will talk about the anatomy of the pig, the different types of cuts and he will teach us all the secrets of this culinary tradition: from the basic techniques to the processing of the meat, up to the salting and maturing of the meat , and the making of sausages . At the end, we will be able to enjoy a well-deserved lunch with the results of our work accompanied by other typical Umbrian products!
Experience
That of the butcher, is an ancient craft, and Umbria, in particular, has managed to make it a real culinary art renowned since Roman times. We will have a guided visit to a prestigious farm near Assisi, and there we will learn the secrets of this tradition: the anatomy of the pig, the basic techniques of cutting the pig, processing of meat up to the production of sausages, preservation , salting, and aging of meat. At the end of the lab, we will have a well-deserved lunch with the results of our work accompanied by other Umbrian typical products!
