Aged sake, however, is stored for three to twenty years or longer. The long maturation gives the sake a full body and robust character with balanced sweetness, acidity, umami and delicate bitterness. A strong texture and a long finish contribute to an inimitable enjoyment. Aged sake can be dry like a red wine, refreshing with slight sweetness and acidity like a white wine or aromatic like a dessert wine. As non-distilled, but brewed beverage with an average alcohol content of 14% to 18%, Aged Sake is very pleasant to enjoy.
