Go behind the scenes of the world's most secretive business. Take a tour of a Provencal truffle plantation, learn how truffles are grown and truffle dogs are trained, and go on a hunt for France's elusive "black gold" with professional hunters who know the tricks of the trade.
You will be regaled with stories of successes and sabotage, and learn to tell the difference between a real Provençal tuber melanosporum and its inferior Chinese counterparts. You'll also learn how to properly clean, store and cook with truffles.
The Pastras olive and truffle oil.
The tour begins with a walk to a cool and shady area of the property, where your English-speaking guide will provide background on the farm, how truffles are grown, and how to hunt them. Then you'll be joined by the French hunter and his three dogs, who will dig up truffles with your help. After the hunt, we'll return to our scenic summer kitchen to taste three different hors d'oeuvres with truffles, followed by truffle ice cream with truffle honey, and finally a tasting of our organic extra-virgin olive oil, truffle oil and truffle salt, served with all you care to drink Champagne. During the tasting you will learn about what to look for when dining on truffles in restaurants and buying truffle products, plus how to clean, store, and prepare fresh truffles yourself.
