Meet in central Florence and, in the morning class (except Sundays and holidays), follow the chef to the lively Sant’Ambrogio Market to pick fresh local ingredients. Back in the kitchen, it’s aprons on! Start by preparing classic sauces like ragù and tomato, then knead the pasta dough using just eggs and flour. While the dough rests, you’ll learn to make a creamy, authentic tiramisù. After a quick break with Tuscan appetizers and stories about Italy’s rich culinary heritage, it’s time to roll out your dough and shape it into perfect tagliatelle and ricotta-filled ravioli.
