The chicken is first poached before it is dipped in ice-cold water to keep the meat soft and tender. It is then served with a light chicken soup, ginger sauce, black soy sauce, and Heng Ji's own homemade chili sauce using their secret recipe. 

The highlight is the rice that has been cooked with the chicken's oils giving it a fragrant aroma and a treat for the taste buds. The end product may look surprisingly plain, but it is very delicious.
