Learn the over 1000-year-old art of Japanese sweets making from an expert in Hokkaido. Meet Yuki, a pastry chef who once worked for the imperial family and has made many TV appearances, to learn about the ancient techniques. With Yuki’s help, make four pieces of nerikiri, which are chewy rice cakes filled with sweet white bean paste. Learn the authentic techniques passed down for generations as well as the history of making sweets as you work. When everything is finished, enjoy your dessert with some traditional green tea and good conversation. The recipe for the dough is available on request, so you can take a little bit of Japan with you wherever you go.
