While the éclairs are in the oven, you will make a creamy chocolate pastry cream with a Mexican twist. After a well-deserved break, you will fill the choux, prepare the chocolate glaze and decorate them. Finally, you can sample these delicious éclairs and take the remaining ones with you to enjoy after the class.
