His specialties are foie gras poiret and braised conger eel, and he substituted sansho(Japanese pepper) for pepper in the poivrade sauce to create a unique dish.
The restaurant's name means "related" or "connected." "LIAISON" connects classic recipes with Japanese ingredients, past and present.
